Ingredients:
- 1 onion
- 500g mushrooms (sliced)
- 1 tablespoon tahini
- 80ml olive oil

Cut the onion and slice the 500g of mushrooms. We put them together on a tray and put it in the oven at 180º for 15 minutes. Cut the cherry tomato into slices and, finally, make the bruschetta: placing the dip on top of the bread and then the cherry tomato. On the other hand, we mix the olive oil with the arugula and add them to the bruschetta last in small amounts.
3. Christmas quinoa with hazelnuts, apple and blueberries
Ingredients:
- 1 cup of quinoa
- 2 cups of water
- 2 cups of hazelnut
- ½ cup blueberries
- 1 apple
- ¼ onion
- 2 celery stalks
- Lemon
- 1 tablespoon olive oil
- Parsley
- 5 cambray onions

We rinse the quinoa and clean it. Place this in a pot, add salt and cook for 15 minutes. Ingredients:
- Olive oil
- 1 large onion
- 3 garlic cloves
- 6 tomatoes
- Peperoncino
- Basil
- Oregano
- Laurel
- Salt and pepper
- 1 cup of ricotta cheese
- Mozzarella cheese
- 4 black olives
- 2 tablespoons chopped fresh basil
Place the olive oil in a saucepan and mix it with the garlic and onion and fry it. Add the chopped tomatoes to the sauce after 5 minutes of cooking and mix it together with the basil, oregano, bay leaf, pepperoncino, salt and pepper. Let it cook for 5 minutes and lower the heat and cover. This will be the sauce.
Let the aubergine soak for 5 minutes and grill or grill until golden brown on both sides. For the sauce, we mix the ricotta cheese, the black olives and the fresh basil and add a little salt and pepper. Once mixed, we place it in the thinnest part of the aubergine and roll it up.
