6. Special seafood cream

Ingredients:

  • 100 ml. Extra Virgin Olive Oil
  • 1 onion
  • 2 cloves of garlic
  • 500 gr of prawns and mussels.
  • 1 tablespoon of concentrated tomato
  • 50ml. ml of brandy
  • 1 liter of water
  • 150 ml of cream
  • Salt to taste

To prepare this recipe it is necessary to peel the prawns. In a saucepan, add the shells and the heads of the prawns. The rest of the prawns (peeled) are reserved in a bowl. Add the extra virgin olive oil to the saucepan containing the shells and heads of the prawns. Add a pinch of salt and put on medium heat. When the shells are golden, add the brandy and leave it on the fire for a couple of minutes. The heads are crushed with a saucepan so that they release their juice and water from time is added. Cover the pan and leave on medium heat for 20 minutes.

The mussels are separated from their shells and their beards are removed. After 20 minutes, the broth is strained and the shells and heads of the prawns are thrown away. The onions and garlic are chopped. On the other hand, heat the olive oil in another pan and add the garlic and onion (5 minutes). Add a tablespoon of concentrated tomato, brandy and let it evaporate for about 5 minutes. The prawns and mussels are added for about 5-10 minutes. Finally, it is removed from the heat and placed in a container to pass the mixer.

Put the cream back in a casserole and add the cream. Mix well, add salt and it's ready.

7. Champagne and raspberry jelly with white chocolate mousse

Ingredients (8 people):

  • 240ml champagne
  • 20ml lemon juice
  • 3 gelatin sheets
  • 100g sugar
  • 20 raspberries

White Chocolate Mousse

  • 300g white chocolate
  • 400ml cream
  • 2 egg whites
  • 2 gelatin sheets
  • 30g sugar

The champagne jelly and the white chocolate mousse are made separately. First the champagne jelly is made.

To do this, it is necessary to treat the gelatin into sheets one by one. In a saucepan, mix the sugar, lemon juice and half of the champagne. Place over medium heat and stir to dissolve the sugar. When ready, remove from heat and add the gelatin sheets to mix again. Then the remaining champagne is added and transferred to another container.

For the chocolate mousse, whip the whites until stiff and add the sugar. In a bowl we leave a little of this cream and the rest is beaten at high speed. When the dough is consistent, leave it in the fridge. Treat the gelatin and let it rest. The chocolate is melted and the cream is heated. Mix the cream, gelatin and chocolate and stir the whole. This mixture is then transferred to a mixing bowl with the whites and transferred to the presentation.

8. Traditional tiramisu in a glass

Ingredients:

  • 500 g Mascarpone Cheese (or also: Philadelphia)
  • 200ml Liquid cream or whipping cream
  • 3 large egg yolks
  • 100g white sugar
  • 200g biscuits
  • 180ml coffee
  • 180ml Amaretto
  • cocoa powder
  • Dark chocolate to grate

Place the cream in the blender to assemble it and add a tablespoon of sugar. Beat for 4 minutes. In a separate bowl, we put the yolks and the rest of the sugar. We beat vigorously. When having the mixture, add the mascarpone cheese little by little. When it is ready, we pour the whipped cream and mix it with enveloping and smooth movements. Then Place the cream in a piping bag and keep it in the fridge. We put the biscuits in a plastic bag and crush them. In a bowl, mix the coffee with the Amaretto.
