1. Salmon and avocado rolls

A good option for cooking are salmon and avocado rolls. It is a fairly simple dish to make. The ingredients of this recipe for 2 people are:

  • Avocado (1 unit)
  • Smoked salmon fillets (8 units)
  • Lemon (½ unit),
  • Balsamic vinegar
  • Salt
  • Chive
  • Olive oil

As for its preparation, first we must mash the avocado. We can add a few drops of lemon. Afterwards, we add a little oil and put it all in a pastry bag.

Then, we roll the salmon fillets and fill them with the previously prepared avocado. We sprinkle everything with chopped chives. We can accompany our plate with a few slices of lemon to decorate.

2. Avocado Gazpacho

Another idea to cook with our star ingredient is an avocado gazpacho. The ingredients for 4 people are the following:

  • Avocado (3 units)
  • Zucchini (½ unit)
  • Cucumber (½ unit)
  • Garlic clove (1 unit)
  • Bread crumbs (20/40 grams)
  • Green pepper (1 unit)
  • Water
  • Sprigs of chives
  • Extra virgin olive oil
  • Vinegar
  • Salt. The ingredients for the garnish will be the following:
  • Ham (100/150 grams)
  • Tomato (1 unit)
  • Red pepper (¼ unit)
  • Slices of toast
  • Boiled eggs (2 units)

As for its preparation, first of all we must soak the breadcrumbs (with a little water). Cut the avocados in half, removing the bones and chopping them. After cleaning the vegetables, we proceed to chop the cucumber and garlic clove, and add them.

We chop the chives branches and also add them. We season everything, add a little water and vinegar and blend it (better with an electric mixer).

Then we chop the boiled eggs and the tomato (previously peeled). Chop and add the red pepper. We serve it all on a plate. We cut the ham into slices and add it together with the slices of toasted bread. We can now serve the gazpacho and accompany it with the garnish.

The elaboration is simple. Chop the salmon and mix it with lemon juice. We add an avocado, previously peeled and chopped. We add chopped tomato and chives, and finally the coriander, salt and pepper.

To prepare this dish, we only need:

Cook the spaghetti (about 300 gr). Meanwhile, we put an avocado in a bowl (it can be already crushed), fresh spinach and walnuts. Add a little chopped fresh basil (a tablespoon) and a little lemon juice (a tablespoon). We mix it with the mixer and add water. This is how we get the sauce.

Finally, we add the sauce to the already boiled pasta (we mix it) and we serve the dish hot. We can add powdered or grated cheese to taste.

7. Rice and avocado salad

The ingredients of this recipe are:

  • Green peas
  • Rice
  • Spring onion
  • Carrot
  • Avocados
  • Lemon juice
  • Oil

Cook the peas and rice (separately). Then we let it cool down. On the other hand, we cut the chives and carrots. Cut the avocado in half, remove the bone and separate the meat. We cut the meat into slices.

Next, we prepare the vinaigrette (with lemon juice, oil and pepper). We mix everything with the rest of the ingredients and now we can dress our salad!

First we toast the bread so that it is golden and crisp. After extracting the meat from the avocado, we mash it on the toast with a fork. We cover the toast with goat cheese (a good idea is to crumble it). We can apply a little olive oil and oil.

9. Avocado wrapped with ham
