Ingredients to make homemade guacamole

As ingredients we will need 3 ripe avocados, ½ green or serrano chili, 2 ripe red tomatoes, 1 onion, the juice of 1 lemon or 1 lime, fresh coriander and a pinch of salt. The most important thing for a good guacamole It will be that the avocados are very ripe.

If we do not have green chili, you can use green pepper instead or prepare it without it. If you prefer, we can also add chives, 1 garlic clove, chilli or even a few drops of tabasco, for those who love spicy.

The classic way to make homemade guacamole is with a stone mortar or molcajete, with which all the ingredients are crushed. Failing that, it can also be prepared with a normal mortar. Some people prefer to make it with a blender, but it is not recommended if you want to use it as a sauce for spreading, since this way it is too creamy.

Easy and quick guacamole preparation

To make homemade guacamole, we must first open the avocados with a knife very carefully, since it is one of the fruits that causes the most problems in this regard. To do it correctly we must cut them horizontally until we reach the bone, to be able to open them and that they remain in two parts. We remove the bone and remove all the pulp.

Place the avocado pulp in the mortar and mash it with a mallet, or failing that, with a fork. But before a smooth and creamy paste forms, we will first add the rest of the ingredients. For this we will first peel and we will chop the tomatoes, onion and chili or pepper into very fine pieces, as well as chives if added as an optional ingredient.

Once chopped, add and mix well with the avocado paste, and continue mashing until well integrated. While we are mixing them, add the lime or lemon juice. We can grind until leaving the desired texture, but the ideal is that it is not excessively creamy, especially if we want the guacamole to wet the chips or corn triangles.

Once we have achieved the desired texture and the sauce is made, we add the salt to taste or other extra ingredients that we want to add, such as the chilli or the drops of tabasco. In that case, we have just mixed well with the fork but being careful to maintain the texture.

How to serve guacamole?

Now that you know how to make homemade guacamole, you should think about what you want to use it for. If you want it use as an ingredient in stews or as a garnish in other dishess, just add it to the dish according to each recipe.

If you are going to reserve it to use at another time, it is advisable to cover it with plastic wrap that remains in contact with the surface of the sauce, since otherwise it could rust. Lemon is said to help prevent oxidation, but just in case you don't want to risk it.
