Preparation instructions
Now yes, these are all the steps you must follow so that the baked ribs are tender and tasty.
1. Prepare the oven tray
Cover the baking sheet with aluminum foil, edges included. Place the wire rack on top and place the ribs on the tray. In this way we allow the heat to reach all areas of the rib and bake evenly.
2. Season the ribs
Brush both sides of the rib with the Dijon mustard, making sure they are completely and evenly covered.
This step can be done the day before to achieve a maceration and a deeper flavor. To do this, we will wrap the seasoned ribs in plastic and store them in the fridge.
3. Pre-grill the ribs
Preheat the oven to 200º centigrade.
Place the oven rack slightly below the heat source making sure that the meaty side of the rib is facing up. Grill the ribs until the mustard is bubbly and the ribs are evenly browned. This can take about 5 minutes.
4. Bake the ribs
Set the oven to a temperature of 150º Celsius and place the tray of ribs at medium height. Bake for two and a half to three hours in the case of pork ribs or an hour and a half to two in the case of beef ribs.
Halfway through cooking, cover the ribs with aluminum foil so that the meat is not dry.
5. Add the barbecue sauce
About 30 minutes before the end of the cooking period, we brush the ribs with the barbecue sauce and cover them again with aluminum foil.
We will know that the ribs are at their point when the knife easily slides over the meatier parts of the rib.
6. Let rest
Once the cooking time is over, we remove the ribs from the oven and let them rest covered with the aluminum foil for approximately 10 minutes.
We can then serve the whole piece or cut individual ribs. Finally, we can add or dip the rib in a little extra barbecue sauce for a more intense flavor.
